    Ingredients

    1) 180g of Almond Flour

    2) 60g of Grated Coconut

    3) 1/4 tsp of Salt

    4) 250g of Castor Sugar

    5) 4 Eggs

    6) 150g Unsalted butter

    7) 2 tbsps Pistachios

    8) 2 tbsps Pistachios

    9) 1 tsp Orange blossom water

    10) 1 tsp Vanilla extract

    11) Medjool Dates, chopped


    Method

    Step 1 of 6

    Preheat the oven to 180°C. Grease your preferred cake pan with butter and line it with parchment paper.

    Step 2 of 6

    In a large bowl, combine dry ingredients - almond flour, coconut, sugar and salt. Whisk them thoroughly.

    Step 3 of 6

    In a separate bowl, combine wet ingredients - eggs, melted butter, orange blossom water and vanilla extract. Mix dry and wet ingredients.

    Step 4 of 6

    Fold in the chopped dates until it is thoroughly combined.

    Step 5 of 6

    Pour the batter into the prepared pan and top with almond flakes.

    Step 6 of 6

    Pop it into the oven for 40 minutes and once it’s baked, let it cool. Cut into slices and transfer to a serving plate and enjoy!
