Tomato Soup instructions:
 Step 1 of 5
Sear chicken thighs in a large sauce pot with some olive oil until they turn slightly brown. Remove and place on a plate.

Melt butter in pot over medium heat.

Add the onions, carrots, and celery. Cook, stirring every few minutes until the vegetables begin to soften; 5 to 6 minutes.

Stir in the garlic, bay leaves, and thyme. Cook, while stirring for about 1 minute.

Pour in the chicken stock and bring to a low simmer. Adjust seasoning with salt and pepper if needed.
Cheese instructions:
 Step 1 of 5
Heat a pan over medium-low heat.
Step 2 of 5
Thinly spread each slice of bread with butter. Spread the other side of each slice with mayonnaise and place the bread, mayonnaise-side-down, in the pan.
Step 3 of 5
Place all 3 types of cheese on bread and let the cheese melt, about 5-10 minutes, place a lid on the pan to speed up the melting.

Flip one slice of bread over the other slice, and let it heat for another 2 minutes, flipping halfway.

Remove from heat once bread is very golden brown, and serve with soup.
