    Ingredients:

    1) 500g Live White Clams
    2) Nikudo Prawn Paste
    3) Haidilao Glass Noodles
    4) 1 Knob of Ginger
    5) 2 Cloves Garlic
    6) Scallions (chopped)
    7) 1 tsp Lee Kum Kee Mushroom Dark Soy Sauce
    8) 200ml water
    9) 1/3 Carrot (chopped)

    Method:


    Step 1 of 7

    Soak clams in salt water for 20 mins. until they purge sand from the shell.

    Step 2 of 7

    Soak glass noodles in a deep plate.

    Step 3 of 7

    Once all clams are open, squeeze Nikudo prawn paste into each clam until filled.

    Step 4 of 7

    In a bowl, create a base layer with the soaked glass noodles. Stand the clams upright on the noodles and sprinkle chopped carrots evenly.

    Step 5 of 7

    Bring water to a boil in a steamer and steam the bowl of clams for 10 minutes.

    Step 6 of 7

    Heat a pan to medium-high, sauté garlic, scallion, and ginger in cooking oil. Pour the mixture over the clams.

    Step 7 of 7

    Garnish with chopped scallions and serve the dish hot.
