    Ingredients

    Batter

     

    1) 2 cups All-Purpose Flour

    2) A pinch of Salt

    3) 2 Eggs

    4) 1 cup Fresh Milk

    5) ⅓ Natural Vegetable Oil

    6) 1 tsp Queen’s Vanilla Extract

    7) 1 punnet Strawberries

     

    Streusel

     

    1) 100g Kerrygold Unsalted Butter

    2) 100g Coarse Brown Sugar

    3) 150g All-Purpose Flour


    Method

     

    Step 1 of 7

    Prepare your streusel mixture by combining flour, cold butter cubes, and brown sugar. Use your hand to crumble it until it forms clumps and crumbs. Keep chilled.

    Then, preheat the oven to 180°C and line cupcake pans with liners.

    Next, mix together flour, castor sugar, baking powder, and salt in a bowl. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.

    Slice strawberries and mix strawberries into the liquid mixture. Incorporate dry ingredients into the liquid mixture.

    Step 5 of 7

    Carefully mix it together and avoid overmixing. Scoop the batter into the prepared cupcake liners. It should fill each liner about ⅔ full.

    Top each cupcake with streusel crumble and bake for 17-20 minutes.
